    In my typical fashion, I searched the Internet to find methods and materials to make my own cheese at home. Needless to say, while I found many well intentioned blogs and recipes, most were way off base. The way I knew the recipes were off is: I already know what cheese tastes like. Cardboard is not one of my favored tastes. I ran into this book at the Brew Hut in Aurora, CO and thumbed through it for about a half hour and bought it. My first real cheese was produced by following directions set forth in this book. Not approximations, but full blown cheeses with flavor and texture that are truly a joy to eat.
